The rare wines of the Ansitz Dolomytos Sacker are an exclusivity - far beyond the borders of South Tyrol they are known for their longevity and the special flavor.
On this tour, you will gain insights that are otherwise reserved for winegrowers and encounter Rainer Zierock's philosophy and vision of a living, ever-renewing agriculture.
You will taste the unique cuvées made from different grape varieties, which are stored in the heart of the residence, a 70-meter-long tunnel. The farmhouse parlour offers the ideal setting to get to know the special wines, accompanied by local delicacies. Let yourself be enchanted by new tastes and awaken your senses!
In the morning of the tour you will be picked up directly at the hotel in a comfortable Premium Executive Van and drive to Unterinn, where the unique wine experience awaits you.
The historical farmhouse
The day begins with a tour of the historic farmhouse with adjacent stable and barn from the 13th century. Bruni Marginter, winemaker with passion, will guide you through the premises and tell you about Rainer Zierock, oenologist and wine philosopher from Württemberg, who is considered a pioneer of South Tyrolean natural wines and who worked at the residence for 10 years. Rainer was the rock star among oenologists in the 90s, "Genius and madness were closely linked in his case," says the winemaker. He rebuilt the entire estate, realigned the viticulture, planted 150 different grape varieties and was guided in all this by Greek mythology. Following this, he created and constructed everything according to the principle of the five elements. He also produced his wines according to the pentagram principle and developed his own tasting system.
"Everything flows", the mantra according he has lived and transformed the winery and the adjacent farm into an artistic unicum. You will visit the 3 oversized terraces, the seminar rooms, and opulent fixtures inside the farm, to name just a few particularities of the residence.
Visit to the wine cellar
You visit the cellar complex with the 70-meter-long tunnel: Here you breathe in the cool, damp air that helps the wine to mature, and you may also feel the intense emotions that we always experience when walking through this cellar. Everything flows: The wine cellar also reflects this principle and is oriented according to the principle of gravity. Due to the natural slope, all work steps can be set completely without outside interference and thus provide the ideal conditions for the aging of the sophisticated natural wines. Norbert Marginter, who continues to run the winery with his daughter, has devoted himself entirely to the biodynamic economy and prepares wines that embodies the "terroir" and are influenced as little as possible in the cellar.
Delicious lunch with wine accompaniment
Enjoy the magnificent view on the large sunny terraces and taste the wines whose grape varieties you have seen before on the vineyards. The wines are blends of Italian and Greek grape varieties - so the Greeks have left their traces on the winery not only mythologically.
After the wine tasting, you will enjoy a delicious lunch in the farmhouse parlor, with local dishes and the appropriate wine accompaniment. The winery invites you with a fantastic view over the vineyards and plenty of space to relax.
